Our bees live in suburban backyards across the metropolitan region of Adelaide, where they are free to forage for nectar and pollen from the large variety of flora in their local area.  We extract our honey in single origin batches, which means that we do not blend the honey from one area with honey from another, ensuring that the complex flavour profile of the honey from each area is preserved.  We also cold extract and only mildly filter our honey so that all the beneficial enzymes, minerals, vitamins and antioxidants remain in the honey.  This means that our honey will eventually crystalise – just another confirmation that you are receiving 100% pure, unadulterated honey as it exists in the hive.  Honey can still be enjoyed in its crystallised form, but if you prefer your honey to be runny, you can stand the jar in boiled (not boiling) water and the residual heat will gently warm the jar and return the honey to a liquid state.  Because honey is such a delicate product, attempting to liquify it in the microwave will destroy all its beneficial properties.
