Glanmire Farm is situation in the Ovens Valley just outside of Tarrawingee, NE Victoria. We breed Speckle Park Cattle, Aussie White Sheep, and cross bred lambs for processing and sale to local butchers and the public alike, along with hay, grain and straw sales. All of our stock are grass fed, with attention to soil and livestock health paramount within our business.

Description

Glanmire Grass Fed Lamb is a premium lamb raised outside of Tarrawingee in the foothills of the Ovens Valley, North East Victoria.

Operating since 2015 with sales direct to public since 2018, and stocking local butcher shops with produce since 2022, customers can be assured they will recieve a quality meat product upon purchase every time.

If purchasing honey, you can be assured this is a premium cold pressed honey derived from our surrounding red, yellow & grey box trees, lemon scented and river red gum, and clover, daisy and many other flowers growing on our farm and surrounding our farm in Tarrawingee. Honey is a limited release, and can be currently purchased as an add on to any lamb order in 400gm and 1kg sizes only.

For delivery beyond the Wangaratta region, please first check with dates. Most areas outside of Wangaratta will be once monthly.

Pricing is based on "dressed weight"

What is “dressed weight? and why is it important?

When buying a side (or quarter) of a cow/sheep etc, the final weight you receive will be less than the total listed by the farmer.

Dressed weight, otherwise known as “hanging weight” is the weight of the carcass after the animal as been killed and the head, blood and offal removed.

So this dressed weight includes all the meat, fat and bones from the “side” of an animal.

From here, the butcher will prepare your “side” or “quarter” based on your specifications.

Some loss of weight can occur through the process of “dry aging” where the meat is allowed to safely “age” this helps to tenderize the meat, but results in some weight loss.

The cut specifications can also have an impact on your final weight, for example, T-bones with bone out will weigh less than bone in.

Dressed weight is used as it is the “most fair” and “most correct” method of weighing an animal for processing.

On average, “boxed weight” can be anywhere from 20% to 30% less than dressed weight.
