Beef and Vegetable Stuffed Peppers:

Ingredients:

  • 1 lb (450g) lean ground beef
  • 4 bell peppers, halved and seeds removed
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Shredded cheese for topping

 

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, brown ground beef. Add onions and garlic, cook until softened.
  3. Stir in diced tomatoes, cooked rice, corn, black beans, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper half with the beef and vegetable mixture.
  5. Place stuffed peppers in a baking dish and bake for 25-30 minutes.
  6. Sprinkle shredded cheese on top and bake for an additional 5 minutes or until the cheese is melted and bubbly.

 

Beef and Mushroom Stroganoff:

Ingredients:

  • 1 lb (450g) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Egg noodles for serving
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, brown ground beef. Add onions and garlic, cook until softened.
  2. Add mushrooms and cook until they release their moisture.
  3. Sprinkle flour over the beef and mushroom mixture, stirring to combine.
  4. Gradually add beef broth and Worcestershire sauce, stirring until the mixture thickens.
  5. Stir in sour cream and season with salt and pepper.
  6. Serve over cooked egg noodles, garnished with fresh parsley.

 

Beef and Potato Casserole:

Ingredients:

  • 1 lb (450g) ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, thinly sliced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown ground beef. Add onions and garlic, cook until softened.
  3. Layer thinly sliced potatoes in a greased baking dish.
  4. In a bowl, mix cream of mushroom soup, milk, half of the shredded cheese, salt, and pepper.
  5. Spread half of the beef mixture over the potatoes, followed by half of the soup mixture. Repeat the layers.
  6. Top with the remaining shredded cheese.
  7. Cover and bake for 45 minutes. Uncover and bake for an additional 15 minutes or until the top is golden brown.
  8. Garnish with chopped green onions before serving.

Beef and Spinach Lasagna

Ingredients:

  • 1 lb (450g) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 9 lasagna noodles, cooked
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups fresh spinach, chopped
  • 2 cups shredded mozzarella cheese
  • Grated Parmesan cheese for topping

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown ground beef. Add onions and garlic, cook until softened.
  3. Stir in crushed tomatoes, tomato paste, water, oregano, basil, salt, and pepper. Simmer for 15-20 minutes.
  4. In a bowl, mix ricotta cheese, egg, and chopped spinach.
  5. In a greased baking dish, layer cooked lasagna noodles, beef sauce, ricotta-spinach mixture, and mozzarella cheese. Repeat the layers.
  6. Top with grated Parmesan cheese.
  7. Cover with foil and bake for 30 minutes. Uncover and bake for an additional 15 minutes or until the top is bubbly and golden.

Beef and Black Bean Tacos:

Ingredients:

  • 1 lb (450g) ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • Taco shells or tortillas

Shredded lettuce, diced tomatoes, shredded cheese, sour cream for toppings

Instructions:

  1. In a skillet, brown ground beef. Add onions and garlic, cook until softened.
  2. Stir in taco seasoning, black beans, corn, and salsa. Simmer for 10-15 minutes.
  3. Heat taco shells or tortillas according to package instructions.
  4. Spoon the beef and black bean mixture into taco shells.
  5. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
